Spinach Hummus
This hummus recipe is always a hit with our little chefs. We teach about where hummus originates and talk about all the ingredients we use. We explain what each ingredient does to bring the hummus together and make it tasty. They enjoy adjusting it to their taste and eating it with fresh pita bread and colorful veggies.
Spinach Hummus
Ingredients
1 ΒΌ cup Chickpeas, soaked overnight and cooked in salted boiling water for about 15-20 minutes, then drained and cooled. (1 can)
β cup Olive Oil, plus more as needed
1 tsp Salt
1/3 cup Tahini
1 pinch Cayenne Pepper
2 cloves Garlic, minced
2 heaping Tbsp plain Greek Yogurt
2-3 Tbsp Fresh Lemon Juice
1 1/2 cups fresh Spinach, Packed
Directions
Blend all ingredients in a blender or food processor while slowly streaming in olive oil. Taste and adjust as needed.
